Panch Phoron (Indian Five Spice Blend) is a whole-seed blend from Eastern India and Bangladesh containing equal parts of fenugreek seeds (methi), nigella seeds (kalonji), cumin seeds, fennel seeds, and mustard seeds (or wild celery seeds called radhuni). Unlike most spice mixes, it is used whole and fried in hot oil or ghee to release its flavor.
