10 Quick Breakfast Ideas with Oats, Muesli and Eggs

Ten quick, healthy breakfast ideas using oats, muesli, eggs and bread that you can make in under 15 minutes on a busy Kathmandu morning.
Most of us in Kathmandu don't eat breakfast in the Western sense. We have tea and a biscuit at seven, and then dal bhat at ten. But with office hours, school runs and long commutes, more families now need something quick and filling in the morning. These are the ideas our team actually uses.
With oats
1. Masala oats
Fry onion, tomato, green chilli and a pinch of turmeric in a little oil, add a cup of oats and two cups of water, and cook for five minutes. It tastes more like a light khichadi than porridge, which suits Nepali tastebuds.
2. Overnight oats
Mix half a cup of oats with milk or yoghurt in a jar, add banana and honey, and leave it in the fridge overnight. In the morning, it is ready to eat. Perfect for people who have no time at all.
3. Sweet oats porridge
Oats cooked in milk with a little sugar or jaggery, cardamom and a handful of chopped dry fruits. Warming on winter mornings.

With muesli and cereal
4. Muesli with curd and fruit
Swap milk for dahi, add apple or banana. It keeps you full longer than cornflakes.
5. Granola bowl
Granola, milk, a spoon of peanut butter and some seasonal fruit. Five minutes, no cooking.

With eggs
6. Nepali-style omelette
Two eggs, chopped onion, green chilli, coriander and a pinch of salt. Serve with toast or rolled in a roti.
7. Egg bhurji
Scrambled eggs cooked with onion, tomato, turmeric and a little chilli. Great with bread or leftover rice.
8. Boiled eggs to go
Boil six eggs on Sunday evening, keep them in the fridge and grab two each morning. Add salt, pepper and a sprinkle of timur.
Eggs, bread and butter are all in Dairy, Bread & Eggs.
With bread
9. Peanut butter and banana toast
Protein and energy in about three minutes. Use peanut butter without added sugar if you can.
10. Chiura with dahi
Not toast, but in the same spirit: beaten rice with curd, a little sugar or salt, and fruit. No cooking at all.
Make mornings easier
- Keep oats, muesli, eggs, bread and a fruit bowl stocked at all times
- Prepare overnight oats or boiled eggs the night before
- Rotate between three or four options so nobody gets bored
A weekly order of milk, eggs and bread, with oats and muesli added once a month, covers most of these. Set it up once and your mornings get a lot simpler.
